I have to be the biggest coconut fan on this planet. You name it, I love it-coconut cream pie, coconut shrimp, coconut ice cream, and the list can go on and on. Here is one of my favorite coconut recipes, outstanding chocolate-dipped coconut almond macaroons-delightfully sweet, wonderfully chewy and soft!
These macaroons are super easy and fun to make. I was a bit worried that I would not be able to make the pretty pyramid shape that I saw in the cookbook, but I was very surprised at how easily the dough could be shaped. Just dip your fingers in water to prevent sticking and shape away. The coconut macaroon by itself is amazing, however, dip these babies in chocolate and they are exceptional. Chocolate-Dipped Coconut Almond Macaroons
- 48 whole almonds
- 1 cup cream of coconut
- 2 tablespoons light corn syrup
- 4 large egg whites
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 3 cups sweetened flaked coconut
- 3 cups unsweetened flaked coconut
- 10 ounces semi-sweet chocolate, chopped
Scoop dough into a tablespoon and place 1 almond in the middle of the dough. Cover up the almond with the dough. Drop by heaping tablespoonfuls about 1 inch apart onto the prepared baking sheets. Form the cookies into loose haystacks with your fingertips, moistening your hands with water as necessary to prevent sticking.

Cool the cookies on the baking sheets until slightly set, about 2 minutes; remove to a wire rack with a wide metal spatula.

Once the cookies are cooled to room temperature (about 30 minutes), line two baking sheets with parchment paper.
Melt 8 ounces of the semi-sweet chocolate in a small heatproof bowl set over a pan of almost-simmering water, stirring once or twice, until smooth. Remove from the heat; stir in the remaining 2 ounces chocolate until smooth.
