Grilled Chicken with Peach and Apple Salsa

Grilled Chicken with Peach and Apple Salsa is one of my favorite dishes to create this time of year. Walking through the grocery store this past weekend I couldn’t help but notice the enormous, brightly colored peaches. I just had to buy some! During the summer heat I love to mix summer fruit with lighter meats. I have been hooked on fruit salsa’s lately, it is perfect with chicken, pork chops, cinnamon chips and grilled halibut. Juicy peaches, tart apples, sweet honey, cinnamon, and cilantro are combined to create a wonderful accompaniment to grilled chicken. Feeling spicy? Add a minced jalapeno pepper to kick it up a notch! :)

Grilled Chicken with Peach and Apple Salsa

Ingredients:

  • 3 tablespoons olive oil
  • 2 tablespoons dry white wine
  • 2 tablespoons fresh lime juice
  • 1 tablespoon white wine Worcestershire sauce
  • 1 1/2 teaspoons dried basil
  • 4 boneless chicken breast halves
Directions:

  1. Mix first 5 ingredients in large bowl. Add chicken and turn to coat. Cover and refrigerate at least 1 hour.
  2. Preheat grill on medium-high heat. Remove chicken from marinade. Grill chicken until just cooked through, about 5 minutes per side, or until meat thermometer inserted into the chicken read 160 degrees F. Transfer chicken to plates. Serve with salsa.
Peach and Pepper Salsa
Ingredients:

  • 2 large ripe but firm peaches
  • 1 small Granny Smith apple, peeled, cored, chopped
  • 1/2 cup chopped fresh cilantro
  • 3 1/2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
Directions:

  1. Bring medium saucepan of water to boil over high heat. Add peaches; cook 30 seconds. Using slotted spoon, transfer peaches to bowl of cold water. Drain peaches. Peel and chop coarsely. Place peaches in large bowl.
  2. Mix in all remaining ingredients. Cover and chill until needed.

    This looks so good. I LOVE stuff like this but my husband doesn’t always like the combination of sweet stuff mixed with meat. Sometimes I have to save stuff like this for times when he’s out, and I get to cook for myself. ;)

      It tastes super yummy and really easy to make! If you like things spicy, try it with a jalepeno! It tastes great either way. Let me know if you try it out! :)
