Maple Mashed Sweet Potatoes

Mashed Sweet Potatoes lightly sweetened with maple syrup and brown sugar. Sweet potatoes are not just for holidays anymore! My husband and I enjoy sweet potatoes all year round. I swear, as much as we eat them you would think we were from the South! ;) It is one of my favorite side dishes and desserts (sweet potato pie) to make. Last Sunday I served this side dish along with caramel apple pork chops and corn bread. Next time you are wanting to make a fast and delicious side dish, remember this light and fluffy substitute for regular mashed potatoes.

I LOVE sweet potatoes and cook them in all kinds of unexpected ways. But this is the classic preparation and you can never go wrong with that sweetness. They’re also good if you throw a little fresh thyme in them.
