Red Velvet Whoopie Pies

Red Velvet Whoopie Pies with cream cheese frosting are perfect for Valentines day! Valentines day is fast approaching and if you plan on making a special meal for your sweetie add these to the menu! These red velvet cake cookies have a mild chocolate flavor and a heavenly cream cheese filling layered in between. One of my favorite cake flavors is red velvet, so I was very excited to make these delicious whoopie pies. If you haven’t jumped on the whole whoopie pie band wagon, I suggest you get on-whoopie pies are fabulous!

Red Velvet Whoopie Pies

Ingredients:

For the Whoopie Pies:
2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
1/2 cup buttermilk
2 tablespoons red food coloring

For the Filling:
8 ounces cream cheese, softened
3 cups powdered sugar
4 teaspoons vanilla extract

Directions:

Preheat oven to 375 degrees F. Line baking sheets with parchment; set aside. In medium bowl combine flour, cocoa powder, baking soda, and salt; set aside.
In large mixing bowl beat butter on medium to high 30 seconds. Beat in brown sugar until light and fluffy. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition just until combined. Stir in food coloring.
Drop heaping tablespoons of the dough onto the prepared baking sheets, about 1-inch apart.
Bake 9 to 11 minutes, or until tops are set. Cool completely on baking sheets on rack. Remove cooled cookies from baking sheets.
To make the cream filling: In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese and powdered sugar until smooth. Add vanilla extract and beat until combined. Transfer to a piping bag and pipe onto back of 1/2 the cookies

    I love RED.VELVET! Anything RED.VELVET! Thanks for your comment. Yes, I heard the midwest was going to be pounded with more snow. It’s CRAZY! What is going on? I don’t think NY/NJ will be slammed as bad, but I think we are expecting ice. Not sure what is worse. I hear ya.. I’m heading to the grocery store tomorrow as well. :-)

    I have seen some other whoopie pie recipes but these stand out to me. I love red velvet and seeing as my husband and myself stay pretty low key on Valentine’s Day, this might be a fun thing for me to make for us.

    Adorable! I love these!! I tried hopping on the whoppie-pie waggon, I actually made a recipe I liked so much that I asked for a cookbook devoted to them for my birthday… BIG disappointment. Do cookbook publishers have to try recipes? You’d hope so.
    Anyway, these look like they actually belong in a whoopie pie cookbook, now I’ve got to try them!

    There is no recipe on earth that I can think of right now that is more appealing than this one. Even thpugh I’m slightly irritable from post-dinner cleanup, I may just have to whip out some utensils and make this happen…!

    I made these and they were DELICIOUS! Albeit not half as pretty as yours, mine just melted into big, flat things. How do you keep that from happening. I also added some white chocolate too the filling, super yummy!

      To keep the cookies from melting, there are a few tricks you can try. First, make sure you use softened butter (not room temperature). Properly softened butter should yield slightly to gentle pressure. If the butter is too soft the dough will be more like batter and it will spread too much as it bakes and lose shape. To soften butter, let it stand at room temperature for 30 to 45 minutes. If you are short on time you can cut the butter into tablespoon-sized chunks and let it stand at room temperature. Second, once you drop the dough on the prepared baking sheets and place in the refrigerator for 10-15 minutes before baking. Those two tricks should help with the spreading.

    I finally got round to making these today! I have to say the icing wasn’t that thick >.< though I added the right amounts of ingredients but ended up using more icing sugar than stated. It was blimming hard getting the colouring into the mixture as well. I also used cocktail sticks so that the cookies wouldn't slide. But it was all worth it! I decided to use the left over icing and put hearts on the top of them! Thank you very much for the recipe ! They taste absolutely delicious and I'm going to try the chocolate and marshmallow ones next :)

    Thank you! This was my first try & it wasn’t too bad. Maybe in your recipe directions you could add the “Yield” amount? Mine were way too big and the frosting was too thin; I only added 3 tsp. of the vanilla. But it was very yummy & I will try it again. Thanks :)

      This recipe makes about 25 whoopie pies. I am sorry to hear that the frosting was thin, if it is too thin next time you make them try adding more powdered sugar until you get the right consistency. Hope this helps! :)
