Red Velvet Cake Balls are the perfect gift for your sweetie this Valentines Day. Red Velvet cake is crumbled, mixed with a cream cheese frosting, rolled into balls and dipped in chocolate. I can’t even remember the last time I baked a cake from a boxed mix, but a boxed mix is perfect for this recipe.
This is the first time I have ever made cake balls, in fact, I had only heard of them a few months ago! I know, where have I been?! These bite sized morsels are the perfect treat for parties or home baked gifts. From the first bite of these delicious cake balls, you will be hooked! I can’t wait to try more of the multitude of cake ball flavors out there!
Yield: 45-50 cake balls
1 (18.25 ounce) red velvet cake mix
1 (16 ounce) container cream cheese frosting
1 (16 ounce) package chocolate bark
Prepare the cake mix in a 9 X 13 baking pan according to the directions on the box. Cool completely on a wire rack.
Crumble the cake into a large bowl. Add the frosting and mix until well combined.
Line a baking sheet with wax paper. Roll a heaping tablespoon of dough into a 1½-inch ball and place it on the prepared baking sheet. Place in refrigerator until firm, several hours.
Melt chocolate in microwave per directions on package.
Working about 4 balls at a time, dip balls in chocolate using a spoon or a dipping fork and place on prepared baking sheet. Keep the undipped balls in the refrigerator until ready to dip.
Once you have covered all the balls in chocolate, place in the refrigerator until the chocolate coating is set. If desired, drizzle chocolate on the balls for decoration.
