Graham Cracker S’mores Cookies with a graham cracker base, topped with a chocolate chip marshmallow cookie and chopped Hershey’s bars on top. If you are a fan of s’mores, watch out! These are incredible!
I don’t know about you, but I am more than ready for summer. I only have 12 school days left until summer break! I remember when I was a kid I would always wonder what the teachers at our school were going to do the whole summer without us. Now I know that the teachers are just as excited if not more than the students to be out for the summer. This summer is going to a particularly busy and fun one for my husband and I. June marks my husband and I’s 3rd wedding anniversary, so we are headed back down to the place we had our destination wedding-Grand Cayman. I am super excited! Lots of scuba diving, beaches and relaxing. When we come back in July, my husband starts a new job in Peoria, Illinois so we will be moving the end of June. I can’t even begin to tell you how busy we have been preparing for the end of school, moving and our vacation. However, it will all be worth it when I can sink my toes into the white sand of Seven Mile Beach. So to help us get in the mood for summer and relaxation, lets all celebrate with these incredible S’more cookies!
Graham Cracker S’mores Cookies
- 1 package graham crackers, broken into squares
- 2 ½ cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 11 tablespoons unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla
- 1 (12 ounce) bag semi sweet chocolate chips
- 1 cup mini marshmallows
- 2 – 3 regular sized Hershey’s bars, broken into pieces
- Preheat oven to 375 degrees F. Line two rimmed cookie sheets with parchment paper. Lay out graham crackers side by side on the pans as close as possible (they should be touching).
- In a medium bowl, whisk together the flour, baking soda, salt and cinnamon; set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream butter with both sugars until light and fluffy, about 2-3 minutes. Beat in egg and vanilla.
- Reduce the mixer to low speed and add the flour mixture, mixing until combined.
- Fold in chips and marshmallows. Place tablespoons of dough on each graham cracker square. Press down slightly with fingertips.
- Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top.
- Return pans to the oven and bake for 5 to 7 more minutes or until dough is golden brown at the edges. Remove to a wire rack to cool.

The cookies will turn out just fine if you bake them on a plain cookie sheet. It just might stick a little bit. If you give the cookies a try I would love to hear how they turn out for you!
