Buffalo Chicken Bites

We continue onto Week 4 of College Football, which means another delicious Football bite! These bite-sized Buffalo Chicken Bites are oven baked, not fried, so not only do they taste great, but are so much healthier for you. These crispy bites are crusted in corn flakes and baked to crispy perfection. They are perfect for snacking, appetizers, parties and tailgating. One of Andrew’s favorite tailgating staples are hot wings dipped in blue cheese dressing. I wanted to try a healthier version of his favorite football treat, so when I stumbled upon this recipe on Nikki’s food blog, Pennies on a Platter, I knew they would be a hit!
These buffalo bites are super easy to make and can even be prepared beforehand if you are hosting a big tailgating party. Just prepare them and keep them in the fridge until ready to bake. They even freeze beautifully!

Buffalo Chicken Bites

These bite-sized Buffalo Chicken Bites are oven baked, not fried, so not only do they taste great, but are so much healthier for you.

Yield: 48 Bites

Ingredients:

3 cups shredded cooked chicken
1/4 to 1/2 cup hot sauce (to taste)
3 1/2 ounces cream cheese, softened
1 3/4 cups sharp shredded cheddar cheese
1/4 cup chopped green onions
1 cup all-purpose flour
4 eggs, lightly beaten
3 – 4 cups Corn Flakes cereal, crushed

Directions:

Preheat oven to 350˚F. Line a large baking sheet with parchment paper.
In a large bowl, combine chicken, cream cheese and hot sauce, cheddar cheese and green onions.
Roll a heaping tablespoon of mixture into a 1½-inch ball and place onto a plate or separate baking sheet. Repeat with the remaining mixture.
Place flour in a shallow dish.
In a second shallow dish, place eggs.
In a third shallow dish, Place cornflakes.
Dip each chicken ball first into the flour, then the egg and ending with the Corn Flakes. Place on the prepared baking sheet and bake for 20 to 25 minutes. Serve warm with ranch or blue cheese dressing.

Recipe Note:
If freezing place the dipped and uncooked chicken balls onto a parchment lined baking sheet and freeze for 15 to 20 minutes. Transfer to a freezer bag and store in the freezer until ready. When ready to bake, place the frozen chicken balls on a parchment lined baking sheet and bake at 350˚F for 25 to 30 minutes, until crispy and golden brown.

    Great minds think alike! I just posted a healthy recipe for buffalo wings today. I’m thinking this version wouldn’t be as good to eat in large quantities, but they look like a delicious option for when I’m wanting to splurge. Perfect for watching a game!

    This is now bookmarked for my Pumpkin Carving Party (unless I have an excuse to make it before). These look so awesome (and easy!) A question though – do you egg & bread them and then put in the fridge/freezer or wait to coat them until just before baking!?

      I egged and breaded them and then froze them. Then the only thing you have to do it bake them! :)

        Once frozen, how would you defrost before baking, or is that even necessary?

          No need to defrost! When you are ready to bake them just place the frozen chicken balls on a parchment lined baking sheet and bake at 350˚F for 25 to 30 minutes, until crispy and golden brown. :)

    I tried these out last night for an easy Friday night dinner. They turned out AMAZING. The best part is, it’s not fried and actually better for you than eating at Buffalo Wild Wings, or something of the sort. I served my Buffalo Chicken Bites with spicy Ranch and Marinara Sauce.     We tried to make these, and they fell apart, it was more of like a good dip for chips than a chicken dipper. I’m not sure where we went wrong but I think we will have to try this again!

    OMG I made these tonight and they were amazing! Next time I won’t add as much cream cheese because they were a little mushy but all in all, will be a favorite.

    These little bites were a huge hit! Everyone wanted the recipe at Christmas. The only change I made was I used a habanero hot sauce and only needed 1/8 cup for it to do the trick! I also calculated that these are around 50 calories each, which isn’t too bad.

    Made these tonight for my boyfriend! We both loved them! Could use more hot sauce next time… I added a heaping over 1/2 cup. Will probably use 3/4-1 cup next time (we love our spicy food!) Perfect sports game watching snack food!

    A friend was short on cash and wanted to spend the last of her cash on a fast food chicken sandwich. I had this recipe marked on my browser (hadn’t yet tried it) and convinced her that we should try these instead. We just bought some canned chicken (what can I say? It was late and we were lazy) and made it with that. I didn’t really follow the measurements as it didn’t seem overly critical and mixed everything up kind of haphazardly. They are a resounding hit though! They fed four adults dinner and no one could get enough. Super easy to make and highly customizable. I don’t like spicy things so half of them didn’t include hot sauce, but everyone loved both kinds.
