Strawberry Oatmeal

Ever since I scored some strawberries at the grocery store for super cheap I have been throwing them into muffins, scones, salads, even my oatmeal. Andrew and I have been enjoying this quick and simple oatmeal all week-long. It is just too good not to share with all of you!  Hearty oatmeal topped with fresh strawberries that have been sliced and macerated in brown sugar. This oatmeal is sure to keep you full and satisfied for hours. Now you have no excuse to skip breakfast…this one only takes minutes to make! :)

Strawberry Oatmeal

Ingredients:

  • 1 ¾ cups water
  • 1 ¾ cups whole milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups quick-cooking oats
  • 1 pint strawberries, rinsed, hulled, and thinly sliced
  • 3 tablespoons dark-brown sugar, firmly packed, divided
  • 4 tablespoon sour cream, divided

Directions:

  1. In a medium saucepan over medium heat, bring water, milk, salt, and cinnamon to a boil. Reduce heat to a simmer and stir in oats; cook, stirring occasionally, until thick and creamy, 6 to 8 minutes.
  2. While the oatmeal is cooking, In a small bowl, toss strawberries with 2 tablespoons firmly packed dark-brown sugar. Let sit at least 5 minutes to bring out the juices.
  3. Divide oatmeal between four serving bowls. Top each serving with 1 tablespoon sour cream. Divide the strawberries among each serving and sprinkle with remaining brown sugar.

Yields: 4 servings
Prep Time: 5 minutes
Cook Time: 8 minutes

    Who doesn’t l-o-v-e strawberries?

    Our fam had a fantastic brunch this a.m. Buttermilk pancakes. turkey bacon + all sorts of berries!. To me, sliced bananas (also) are sooo delicious w/everything ….. piled onto those hot pancakes ….. yumyum!!

    Tomorrow I will have strawberries/blueberries and maybe some banana w/oatmeal. Very good and healthy!

    We’ve found strawberries for $0.99 near us too. I’m going to have to have some oatmeal for breakfast tomorrow. That looks yummy. We actually used our strawberries recently for crepes with nutella and bananas. =)

      Actually ….. sour cream and bananas are absolutely outstanding. With strawberries …. much, much better! Just delicious. Try for yourself!

      We’ve (our entire families) been eating thi8s dish for years and years. A family tradition. (Not with brown sugar though.)

    Strawberries are scrumptious dipped in sour cream and then again in brown sugar. YUM! It’s perfect that you combined this with oatmeal! What a great idea!

    I’ve heard of strawberries dipped in sour cream, so this totally makes sense! What a great healthy breakfast to start of the day! I love oatmeal and this is a nice spin on it!

    I’ve been craving oatmeal lately, and I’ve been getting my fix from instant stuff. Sad, I know. This looks like a much better way to enjoy some oatmeal. We’ve had strawberries pretty cheap in our area, too, so I’ll have to score some next time I’m at the store.
