These past few weeks have been super busy for us. A few weeks ago my parents came and visited with us for two weeks, then this past weekend Andrew’s parents came and stayed. This weekend was just jam-packed! We picked out and ordered all of our nursery furniture and my mother-in-law, Andrew and I went to register for the baby. We spent about three hours wandering around the store scanning this and that. We had lots of fun picking out things for baby boy. Hunger finally got the best of us and we had to leave to get some lunch. When we gave the scanner back to sync it to our registry the lady asked us if we had only scanned eight items. My heart sunk as I explained that we had spent the last three hours scanning and should have about seventy-five items on our list. The lady frantically tried to restore our scanners memory. In the meantime, one of her coworkers came over and explained to us that they have been having issues with the network and that we might have to go back and rescan everything. I about died….I didn’t know whether to scream or cry! I had just wasted three hours of my life for nothing!
After what seemed like forever, the lady came back and explained she was unable to restore the memory on the scanner and we would have to go back and rescan everything!! At that point we just had to leave. I had to get out of that store before I lost my mind! Luckily for us there was a wonderful Italian restaurant next door that we grabbed a leisurely lunch at. Feeling recharged and in a much better mood, we went to the grocery store to pick up things to make for dinner. My life changed forever when I spotted these….
Oh my goodness! These are just dangerous! They are already unwrapped and ready to pop right into your mouth! I had to get rid of them fast! They are perfect not only for satisfying a craving, but also for these cookies. Just slice in half and place on top of the warm cookie. Mmmm..heaven! Oooey, gooey, warm from the oven peanut butter cookies with bits of melty Reese’s cups on top? Count me in! They were the perfect ending to a terrible day!
Oooey, gooey, warm from the oven peanut butter cookies topped with bits of melty Reese’s cups
Yield: 4 dozen cookies
Prep Time: 15 minutes
Cook Time: 10 minutes
2 ½ cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup sugar
1 cup light brown sugar
1 cup creamy peanut butter
2 large eggs
2 teaspoons vanilla extract
1 ½ cups milk chocolate chips
2 cups chopped Reese’s peanut butter cups
Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda and salt; set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugars and peanut butter until light and fluffy, about 2 minutes. Beat in the eggs and vanilla. Add the dry ingredients and beat at low speed, scraping the side of the bowl occasionally, until smooth. Stir in chocolate chips.
Roll a heaping tablespoon of dough into a 1½-inch ball and place it on the prepared baking sheet. Flatten balls slightly into 3/4-inch disks. Repeat with the remaining dough, spacing the balls about 2 inches apart.
Bake 8 minutes, then remove cookies from oven and lightly press cut up pieces of the Reese’s peanut butter cups over the top of each cookie. Return to oven until Reese’s peanut butter cups are slightly melted and cookie edges are slightly golden brown, about 2 more minutes. Cool cookies for 2 minutes on baking sheet before transferring to wire rack to cool completely.
