We continue onto Week 8 of College Football, which means another delicious Football bite! Today Purdue travels to Columbus, Ohio to take on the #7 Ohio State Buckeyes! What better way to celebrate another Buckeye win then with some deliciously spicy and cheesy Jalapeno Popper Dip? It’s super easy, incredibly tasty and highly addictive! I have had this recipe bookmarked ever since I found it on Pinterest a few months ago. One of the best things about this dip is that it can be made the night before and placed in the oven right before serving. This dip has a little kick, but if you like things a bit more spicy go ahead and add another can of jalapenos. If you prefer to use fresh jalapenos, I suggest seeding two and using the seeds and ribs on the other two. Make it as mild or spicy as you like! Serve with toasted French bread, tortilla chips, or even crackers.

2 (8 ounce) packages cream cheese, room temperature
1 cup mayonnaise
1/2 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
1 cup Parmesan cheese, grated, divided
1 (4 ounce) can chopped green chilies
1 (4 ounce) can sliced jalapeños, drained or 4 jalapeños, minced
1/2 cup panko bread crumbs
4 tablespoons unsalted butter, melted
Preheat oven to 375F.
In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, mayonnaise, cheddar cheese, monterey jack cheese, ½ cup parmesan cheese, green chilies and jalapeños until combined. Transfer to a 2 quart baking dish.
In a small bowl, combine the bread crumbs, remaining ½ cup parmesan cheese and melted butter. Sprinkle evenly over the dip.
Bake in the preheated oven 25 to 30 minutes, until the top is golden brown and the dip is bubbling.
Recipe Note: If you like it spicy add another can of chopped jalapeños.
