Snickers Caramel Popcorn

We continue onto Week 10 of College Football, which means another delicious Football bite! For this weeks recipe I decided to take all of that extra Halloween candy we have hanging around and make it into an addicting football snack…Snickers Caramel Popcorn! I am a huge fan of caramel popcorn, whether it’s homemade, the Boy Scout’s, or even Cracker Jacks, I find it hard to resist.

Have you ever been to Garrett Popcorn Shops? I discovered this amazing place a few years ago during a Christmas shopping trip to Chicago. There was a line wrapped around the block despite the freezing cold temperatures outside. So of course I had to stand in line and see what the fuss was all about. After what seemed like forever, we were finally through the front doors and overwhelmed by the selection of gourmet popcorn they had. Andrew and I grabbed a small tin of their Pecan CaramelCrisp and headed out the door. As soon as I took one bite I knew that I should have bought more! Now every time we go to Chicago, the Garrett Popcorn Shop is one of the first places I have to stop. Luckily for my waistline, a stop to Garrett is only once or twice a year. The rest of the year I have to get my caramel popcorn fix by creating my own. :D

For this recipe you can use any candy that you have lying around. I chose Snickers because they are my absolute favorite! Why not whip up a batch to cheer on your favorite football team this season? Or better yet, make a batch to hand out to your friends and family as holiday gifts (it will be upon us before you know it! ;) ).

Snickers Caramel Popcorn

Cook Time: 1 hour

Total Time: 1 hour and 30 minutes

Ingredients:

5 quarts plain popped popcorn
1 cup unsalted butter
2 cups light brown sugar
½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
21 “funsize” Snickers bars, coarsely chopped
1 cup milk chocolate chips, melted

Directions:

Preheat oven to 250 degrees F. Place popcorn in a very large bowl.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour over popcorn, stirring to coat.
Place caramel popcorn in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour.
Remove from oven and stir in the chopped Snickers. Return to oven for 3 more minutes so the Snickers begin to melt slightly into the popcorn.
Remove from oven and drizzle with melted chocolate. Let the popcorn sit until chocolate hardens. Break popcorn into pieces and store at room temperature in an airtight container.

    Garrets is unquestionably the greatest popcorn on the planet. I love their Chicago mix so it is salty sweet. Now you have my mouth watering and I don’t have time to go to Chicago…although a road trip might be in order! I have an asian caramel corn recipe with sesame seeds, ginger and cashews that you might love!

    So glad to see a sweet football snack. I also love caramel corn. Adding candy to it is such a good idea, although it could definitely lead to eating way too much I bet :)

    As soon as I read that you’d purchased a “small tin”, I knew you’d regret it. Their popcorn is incredible, isn’t it? Today’s snack fits right in with the rest of your football goodies. Yum!

    That popcorn looks so good. I feel I need to rush out and buy all the ingredients and whip this up in a huge hurry. You certainly must have collected a lot of Halloween candy and it is certainly giving you great ideas for using it up xx

    OMG Christina. You are KILLING me. I want to jump right through the screen and eat that entire bowl of popcorn for breakfast. Sure I’d have a major sugar crash but hey – it would make my monday SO incredible to start it out with this. i LOVE snickers and popcorn is like my favorite food ever lol!
