Eggnog Muffins

Merry Christmas everyone from my kitchen to yours! I hope all of you are enjoying a nice and relaxing day with your closest family and friends. This year has been a very special and busy holiday season thanks to the arrival of our Little Sweet Pea!

If you’re a fan of anything eggnog like me, then you have to run out and buy some eggnog while it’s still in season and make these incredible muffins! Moist, tender and packed with festive flavor, these muffins are sure to be a hit during the holiday season.

These muffins come together in under 30 minutes, making them an easy favorite in my house. Serve warm with a glass of cold milk or if you really like eggnog…a glass of the creamy holiday drink!

Eggnog Muffins

Yield: 12 muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes


For the Streusel Topping:
½ cup all-purpose flour
1 cup light brown sugar
¼ teaspoon vanilla extract
¼ teaspoon ground nutmeg
1/8 teaspoon cinnamon
5 tablespoons unsalted butter, cold and cut into pieces

For the Muffins:
2 cups all-purpose flour
½ cup sugar
¾ teaspoon kosher salt
1 tablespoon baking powder
1 teaspoon nutmeg
¼ cup light brown sugar
8 tablespoons (1 stick) unsalted butter, melted
2 large eggs
¾ cup eggnog
1 teaspoon vanilla extract
½ teaspoon rum extract


For the streusel topping: In the bowl of a stand mixer fitted with the paddle attachment, stir together the flour, brown sugar, vanilla, nutmeg, and cinnamon. Add the butter and toss with a fork to coat with the flour mixture. Mix on medium-low speed until the texture resembles coarse cornmeal, with the butter pieces no larger than small peas. Transfer mixture to a small bowl and place in refrigerator until ready to use.
Preheat the oven to 375ºF. Line muffin cups with muffin liners.
In a large bowl whisk together flour, sugar, baking powder, nutmeg, salt and light brown sugar; set aside.
In a medium bowl, whisk together the melted butter, eggs and eggnog and extracts. Stir the butter mixture into the dry ingredients until just incorporated.
Divide batter evenly among muffin cups. Sprinkle streusel topping evenly among muffins.
Bake until golden brown or until a toothpick inserted into the center comes out clean, about 20 minutes.
