Chocolate-Peanut Butter Pudding

Chocolate and peanut butter lovers rejoice! Today I have a recipe that will curb that overwhelming craving for that delicious duo without derailing all that hard work that you have put in at the gym. For me, the ideal dessert always combines this delicious duo. In fact everyone that knows me, knows that I am a peanut butter and chocolate freak! Seriously….it borders on obsessed! So when I stumbled across this recipe in my recent Cooking Light Magazine, I knew I had to give it a try! It’s super easy to whip up and I promise it will make you weak in the knees with all of that chocolately goodness! And the best part? You won’t even know that it’s light! So what are you waiting for? Don’t you deserve a bite of this rich and creamy peanut buttery pudding? ;)

Chocolate-Peanut Butter Pudding

Yield: 6 servings

Ingredients:

1/3 cup granulated sugar
2 tablespoons cornstarch
2 tablespoons Dutch process cocoa
1 ½ cups 1% low-fat milk
1/2 cup light cream
1/3 cup milk chocolate chips
1/4 cup creamy peanut butter
1 tablespoon chopped unsalted, dry-roasted peanuts

Directions:

In a medium saucepan, whisk together the sugar, cornstarch, and cocoa. Whisk in milk and cream. Bring to a boil over medium-high heat. Cook 1 minute or until thick and bubbly. Remove from heat. Add chocolate and peanut butter, stirring until smooth. Spoon about 1/3 cup pudding into 6 bowls. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set. Just before serving top each serving with 1/2 teaspoon peanuts.
