Description

Boston Creme Pie Vanilla Sandwich Cookies have light and fluffy cookies sandwiched with elegant vanilla cream filling and decadent chocolate ganache topping.

Ingredients

Vanilla creme pudding Ingredients:

  • 2 C whole milk
  • ¾ C sugar
  • ¼ tsp kosher salt
  • 4 large egg yolks
  • 4 tbsp cornstarch
  • 2 tsp pure vanilla extract
  • 2 tbsp unsalted butter

Cookie ingredients:

  • 1 C sugar
  • ½ C unsalted butter, softened
  • 2 large eggs
  • 3 C flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • ¾ C whole milk
  • 1 tsp pure vanilla extract

Chocolate Ganache:

  • ½ C semi sweet chocolate chips
  • 2 tbsp unsalted butter
  • 1 tbsp clear corn syrup

Instructions

Vanilla creme pudding directions:

  1. Using a medium pot, heat the milk, ½ C sugar and salt until warm to the touch
  2. In a small bowl, whisk together the yolks, cornstarch and ¼ C sugar until combined
  3. Slowly pour the warm milk into the egg mixture and whisk constantly
  4. Pour the liquid into the pot and whisk some more for about 2-3 minutes over medium heat until thick
  5. Pour into a mesh sleeve into another bowl
  6. Cover with plastic wrap and place in the fridge overnight
  7. Preheat oven to 350 and line a baking sheet with parchment paper
  8. Using a standing mixer, beat the butter and sugar mixture together until combined and creamy
  9. Beat in the eggs until combined
  10. Using a medium bowl, whisk together flour, baking powder, and salt
  11. Gradually mix in the dry ingredients while alternating with the milk and vanilla until combined
  12. Using a medium ice cream scooper, scoop out some dough and place onto the cookie sheet
  13. Bake in the oven for 13-15 minutes or until lightly browned
  14. Allow to cool completely
  15. Match the tops and bottoms of the cookies
  16. Using a disposable piping bag, scoop the pudding into the bag
  17. Cut the tip off
  18. Pipe one hefty dollop of pudding into the middle of the bottom cookie
  19. Place the top cookie on top and lightly push down

Chocolate Ganache directions:

  1. Place ingredients in a double boiler and heat until melted
  2. Allow to cool slightly
  3. Spoon on the ganache on to the top of the cookies
  4. Serve immediately and enjoy!
