How to make Homestyle Chicken Noodle Soup:

  • 2 bay leaves
  • 1 – 8 oz bag of baby carrots
  • 1 medium rib celery, chopped into ¼ in cuts
  • 1 tbsp minced garlic
  • 1/4 teaspoon dried thyme
  • 1- 8 oz bag of Egg Noodles
  • Fresh Parsley for garnish

How do you prepare the chicken for the soup?

You can actually use a rotisserie chicken that is already cooked. Most grocery stores with a deli sell hot, cooked rotisserie chickens for pretty cheap. If you don’t have access to pre-cooked chicken, you can cook your own and use that. Follow whatever recipe you normally use.

How long is the cooking time for the soup?

Because you are starting with pre-cooked chicken, it cooks pretty quickly. You need to simmer until the carrots and celery are fork tender, approximately 25 minutes. Then add the noodles and continue to simmer until they are done about 10-15 minutes.

Can the soup be frozen for future use?

Yes, you can freeze homestyle chicken noodle soup. Allow it to cool down all the way, then pour it into a food container or freezer bag. Remove any excess air and freeze for up to 3 months. Thaw before reheating.

Can the soup be cooked in a slow cooker?

Yes, add the ingredients to the slow cooker and heat on low for 5–6 hours or high for 3–4 hours. When using the slow cooker, it’s best to use chicken raw chicken breasts instead of rotisserie chicken. You will need to shred it once it’s done. This will prevent the chicken from being overcooked.

Then add your egg noodles during the last 20 minutes of cooking.

Can the noodles be cooked separately from the soup?

Yes, it’s fine to cook the noodles separately. My only caution is that when you cook the noodles in the soup, they absorb all the delicious soup flavors and will taste better. It’s entirely up to you, but we prefer to cook them in soup.

How can the soup be thickened?

The soup can be thickened by adding 1/2 cup cold water with 1/2 cup cornstarch. Stir well and slowly add to the homestyle chicken noodle soup. It will thicken as it simmers.

How can the soup be served?

Serve with some warm bread or dinner rolls, over a pile of mashed potatoes, or by itself. It also goes well with a gooey grilled cheese sandwich or a fresh salad.

Can the soup be made ahead of time?

Yes, the soup can be made and stored in the fridge for up to 4 days. Additionally, you can freeze it for up to 3 months, so it works well for meal planning.

Can the soup be made vegan or vegetarian?

Yes, you can leave out the chicken and swap the chicken broth to veggie broth. You could also swap the egg noodles for your favorite vegan or vegetarian noodles.
