Grilled Vegetable Couscous with Lemon and Goat Cheese

Ingredients
For the Vegetables:
3cupssliced zucchini
1lb.asparagus, trimmed
1small red onion, cut into 1/2-inch thick slices
2tablespoonsolive oil
Salt and black pepper to taste
1red bell pepper
For the Couscous:
1cupof uncooked couscous
1tablespoonminced lemon zest
For the Dressing:
3tablespoonsfresh lemon juice
2tablespoonsolive oil
2cupshalved cherry or grape tomatoes
1/2cupchopped fresh parsley
1/4cupchopped scallions
3oz.goat cheese, crumbled
Instructions
Preheat grill to medium-high heat. Brush the grate with oil.
In a large bowl, toss zucchini, asparagus and onion with 2 tablespoons olive oil; season with salt and pepper. Grill vegetables (including bell pepper), covered until charred, 5-6 minutes. Chop zucchini, asparagus, and onions into bite sized pieces. Transfer bell pepper to a small bowl and cover with plastic wrap and steam for 10 minutes. Peel, seed and dice bell pepper.
Cook couscous according to package directions adding the lemon zest; set aside.
In a large bowl, whisk together the lemon juice and 2 tablespoons oil. Add couscous, grilled vegetables, tomatoes, parsley, and scallions; season with salt and pepper. Top with goat cheese and serve.
