Who would have ever thought that apple pies and cookies would be such an amazing pairing? The apple pie cookies recipe brings these two favorite desserts together in a way that did before. These easy apple pie cookies have a very simple and flaky crust with a warm filling combining apples, as well as cinnamon. This is a dessert you will run out of due to folks asking for more!
Ingredients
6oz.Cream cheese softened
2Sticks of butter softened and unsalted
1Tbsp.Granulated sugar
2tsp.Cinnamon
1Tbsp.Vanilla extract
2C.All purpose flour
1Can Apple pie filling
For the cinnamon sugar garnish:
2Tbsp.Granulated sugar
1tsp.Cinnamon
Instructions
Preheat the oven to 350 degrees.
Add the cream cheese and softened butter into a mixing bowl, and beat on high until fluffy and creamy.
Place the remaining ingredients for the cookies into the mixing bowl, and beat until a well-combined dough has formed.
Roll the dough out onto a floured surface until it is about ¼ of an inch thick.
Use a three inch round cookie cutter to cut out 40 circles of dough.
Place the apple pie filling into a bowl and mash.
Put a small dollop of apple pie filling in the center of 15 of the circles of dough.
Cover the filling with another circle of dough on top, and use the tines of a form to crimp the edges of each filled cookie closed.
Bake for 20-25 minutes until browned and cooked through.
Mix together the ingredients for the cinnamon sugar garnish, and sprinkle on cookies fresh out of the oven.
