This chicken parmesan pasta is the perfect one pot meal for busy weeknights. It's flavorful and can be on the table in less than 30 minutes. Plus, it's a great way to use any leftover chicken parmesan. This chicken parmesan pasta is sure to become a family favorite.
Ingredients
1 tablespoonOlive oil
1 Onion, medium, diced
1 poundChicken breasts, boneless, skinless, (approximately 2 large breasts), cut into 1 inch cubes
2teaspoonsMinced garlic
8 ozDry penne pasta
2 cupsMarinara sauce
1 ½ cupsChicken broth
2teaspoonsDried oregano
½ cupParmesan cheese, shredded
1 ½ cupsMozzarella cheese, shredded
Salt and pepper (for seasoning)
Instructions
Heat olive oil in a large skillet over medium-high heat. Saute onions until they start to turn translucent, about 2-3 minutes.
Season chicken with salt and pepper and add to the skillet. Brown chicken until mostly cooked through, about 4-5 minutes. Add garlic and saute until fragrant, about 1 minute.
Add dry pasta, marinara sauce, chicken broth and oregano. Stir until ingredients are well combined in the skillet. Cover the skillet and reduce to a simmer. Cook for 25-30 minutes, stirring a few times until pasta is cooked and the liquid has reduced to a sauce consistency.
Turn off the heat and stir in the parmesan and ½ a cup of mozzarella. Sprinkle remaining 1 cup of mozzarella over top and cover with skillet until cheese melts, around 3-4 minutes.
