Ingredients
1 ½lbs.Boneless skinless chicken breast
2 Medium eggs
⅓ C. Almond flour
1 C. Shredded mozzarella cheese
2 Tbsp. Fresh basil , chopped
2 Tbsp. Parsley , chopped
2 Tbsp. Fresh chopped chives
1 Tbsp. Olive oil
½ tsp. Garlic powder
Salt and pepper to taste
Instructions
Slice the chicken breast into very thin pieces.
In a bowl, combine the chicken, almond flour, eggs, cheese, parsley, basil, chives, and salt and pepper to taste. Knead with your hands to combine well.
Heat the oil in a large skillet over medium heat on the stove.
Drop spoonfuls of the chicken mixture into the skillet, and flatten slightly with a spatula. Fry evenly on both sides until golden brown, and until the chicken is cooked through.
