A 10 minute recipe inspired by the popular Chinese takeout. Perfectly cooked noodles in a creamy, tangy sauce. This simple and refreshing recipe is easy to make and has a ton of flavor from the fresh Chinese ingredients.
Ingredients
1poundnoodles, frozen or (preferably) fresh
2tablespoonssesame oil, plus a splash
3½tablespoonssoy sauce
2tablespoonsChinese rice vinegar
2tablespoonsChinese sesame paste
1tablespoonsmooth peanut butter
1tablespoongranulated sugar
1tablespoonfinely grated ginger
2teaspoonsminced garlic
2teaspoonschile-garlic paste, chile crisp or chile oil, or to taste
1Half cucumber, peeled, seeded and cut into ⅛-inch by ⅛-inch by 2-inch sticks

Instructions
les to a large pot of boiling water and cook for about 5 minutes until the noodles are just tender and still al dente. Drain the noodles over a colander and rinse with cold water. Once the water has drained add the noodles back to the pot and toss with sesame oil.
Add the remaining sesame oil, soy sauce, rice vinegar, sesame paste, peanut butter, sugar, ginger, garlic, and chili-garlic paste to a medium bowl and whisk together until fully combined.
