Ingredients
Salad:
3cupswatercress
1green apple
1pear
⅓cupalmonds
Salad Dressing:
2tbspolive oil
½lemon, juiced
1tspseeded mustard
1tbsphoney
1tspmayonnaise
salt, to taste
Instructions
To prepare the salad, start by washing and trimming the watercress, and slicing the pear and apple into matchsticks. Add the sliced pear and apple into a bowl of ice water to stop them from oxidizing.
In a dry pan over medium heat, toast the almonds for 1-2 minutes until the color darkens. Remove from the heat and roughly chop the almonds.
Add the watercress, sliced pears, apples, and almonds to a large salad bowl and toss to combine.
Prepare the dressing by adding the olive oil, lemon juice, mustard, honey, mayonnaise and salt to a mason jar. Close tightly with a lid and shake vigorously to combine.
Drizzle the dressing over the prepared salad and toss to coat.
