This easy side dish is fragrant and delicious. Fluffy rice with fresh lemon, oregano, and parsley this simple recipe makes a great side dish for BBQ chicken, fish, or pork. Ready in under 30 minutes and uses only simple ingredients.
Ingredients
1tablespoonOlive oil
4Shallots
2Garlic clove
1cupLong grain white rice
1teaspoonDried oregano
1pinchSea salt and black pepper
6tablespoonLemon juice
1tablespoonLemon zest
2cupsChicken stock
¼cupCurly parsley - finely chopped
Instructions
Add olive oil to a large pan over medium heat, once hot add the sliced shallots and chopped garlic. Cook for about 4 minutes until the shallots have softened and the garlic is browned.
Add the rice to the pan and cook for about 1 minute stirring occasionally.
Pour in the chicken stock, and add the oregano, lemon juice, salt, and pepper. Bring to a gentle simmer and cover. Cook for about 15 minutes and then turn off the heat, leaving the lid on for an additional 10 minutes to steam the rice.
Fluff the rice with a fork and garnish with additional lemon juice, lemon zest, and chopped parsley.
