Strawberry cobbler is like summer in a bowl. The crumbly buttery crumb surrounds the sweet fresh strawberries making every bite a heavenly experience. Easy to make this cobbler recipe is bursting with fresh strawberries and is ready in under an hour.
Ingredients
2poundsfresh strawberries, stemmed and quartered
1½cupsgranulated sugar, divided, plus extra for topping
2tablespoonscornstarch
2teaspoonslemon juice
1cupall-purpose flour
1½teaspoonsbaking powder
½teaspoonsalt
1cupwhole milk
1teaspoonvanilla extract
½cupbutter, melted and cooled
Instructions
Pre-heat the oven to 350°F and grease an 8x11 baking dish with butter or oil, set aside.
Add the quartered strawberries, ½ cup of sugar, cornstarch and lemon juice to a bowl and combine well.
In another large bowl, combine the remaining 1 cup of sugar, flour, baking powder salt, milk, and vanilla extract. Whisk everything together and then slowly pour in the melted butter in while whisking.
Pour the batter into the prepared baking pan and top with the strawberry mixture. Bake for 40-45 minutes until the crumb is golden brown.
