For the Meatballs:
4sliceshearty white sandwich bread, torn into pieces
2large egg yolks
1/2cupfinely chopped fresh parsley
2garlic cloves, minced
2 1/2pounds85% lean ground beef

128-ounce can tomato sauce
2 1/2cupsapricot preserves
1/4cuppacked dark brown sugar
1/4teaspoonred pepper flakes
Adjust oven racks to upper-middle and lower-middle positions and heat oven to 450 degrees F.
In large bowl mash bread, milk, and egg yolks with a fork until smooth. Add pork, parsley, garlic, salt, and pepper and mix until combined. Add beef and mix until combined.
