Ingredients
1lb.boneless and skinless chicken breast, sliced in half to make thin
1/4cupall-purpose flour
1tsp.salt
2tsp.ground black pepper
2tbsp.olive oil
1Tbsp.minced garlic
1/2cupchicken broth
1/2cupheavy whipping cream
1/2cupgrated Parmesan cheese, reserve ¼ for garnish
3Tbsp.lemon juice, 2 lemons juiced
2Tbsp.non-pareil capers in jar
Parsley or fresh Basil to garnish
Instructions
Pat dry your chicken breasts with paper towels.
Slice in half to make thin or buy pre-sliced thin boneless chicken.
Mix the flour, salt and pepper in a dish.
Dredge the chicken generously with the flour.
Turn on the saute mode on your Instant Pot and pour in oil..
Add the dredged chicken and brown on both sides, about 3 minutes.
Remove the chicken and place on the side.
Add the minced garlic and toss to cook for 1 minute.
Add the chicken broth to the garlic.
Allow to cook for 1 minute. Make sure to use a wooden spoon to scrape the bottom of the pan to remove any stuck on pieces.
Add the chicken back to the instant pot.
Add the heavy whipping cream, parmesan cheese, salt, lemon juice, and capers.
Cover the instant pot and seal the vent.
Set to manual on high for 7 minutes.
Prepare pasta noodles as directed in a pan on the stove.
Allow for a natural release for 4 minutes.
Open the lid carefully.
Toss the sauce with the pasta.
Place the chicken on a parchment covered pan and sprinkle with fresh parmesan.
