If you're a fan of cabbage rolls but not so much the tedious process of making them, then look no further: my stuffed cabbage casserole is here to deliver all the deliciousness you need.
Ingredients
1Tbsp.Olive oil
1lb.Ground turkey
½C.Onion chopped
1Can tomato sauce 15oz.
2Cans Diced tomatoes 15 oz. each
1Tbsp.Garlic powder
1tsp.Oregano
1Medium cabbage chopped
15oz.Ricotta cheese
1C.Mozzarella cheese shredded
Chopped parsley for garnish if desired
Salt and pepper to taste
Instructions
Preheat the oven to 350 degrees.
In a deep-sided skillet or pot on the stove, heat the olive oil, ground turkey, and onion over medium-high heat. Continue to cook until the turkey is completely browned.
Add the tomato sauce, diced tomatoes, garlic powder, oregano, and salt and pepper to taste to the pot and simmer for 15-20 minutes.
Place half of the shredded cabbage in the bottom of a well-greased casserole dish.
Add ½ of the turkey sauce mixture over the cabbage.
Top the turkey sauce layer with the other half of the cabbage.
Spread the rest of the turkey sauce mixture over the cabbage.
Place a layer of ricotta cheese over the casserole, and sprinkle with the mozzarella cheese.
Cover the casserole dish with tin foil, and bake for 40 minutes.
Remove the foil, and bake for another 15 minutes before serving.
