When it comes to the way potatoes can be made, this recipe is one of my favorites. There is something special about Lemon Butter Roasted Potatoes. I am not sure if it is the lemon, or if it is the Garlic and butter that is my favorite, I am betting it is a combination of all of that. You know that you have a winner when the food is gone and the family still wants more.
Ingredients
3lbs.Baby golden potatoes cut in half lengthwise
¼C.Butter melted
⅔C.Chicken broth
1Tbsp.Lemon juice
1tsp.Oregano
½tsp.Rosemary
3tsp.Minced garlic
½C.Parmesan cheese grated
Salt and pepper to taste
Instructions
Preheat the oven to 375 degrees.
Pour the butter into a 9x13 baking dish and add the sliced potatoes on top of it.
In a bowl, combine the chicken broth, lemon juice, rosemary, oregano, minced garlic and salt and pepper to taste.
Pour the mixture over the potatoes, and toss to coat completely.
Cover the baking dish with tin foil and bake for 40 minutes.
Remove the foil, sprinkle on the parmesan cheese and bake for another 30 minutes or until done to your liking.
