Sweet potato is a vegetable that many people love, but that just as many do not really have much experience with. There are some great recipes out there for sweet potato, but the sweet potato pie is a great use of this super nutritious vegetable. If you love sweet potatoes, this is a great recipe to try out and to really dive into.
Ingredients
1large sweet potato, about a pound
1Premade frozen pie crust not baked
½C.Softened and unsalted butter
⅔C.Granulated sugar
⅓C.Brown sugar
½C.Milk
2large eggs
1tsp.Vanilla extract
Instructions
Place the sweet potato into a pot of water, and boil for 40 minutes. Remove immediately and place under cold running water.
Once cool enough to handle, gently remove the skin.
Add the sweet potato, butter, granulated sugar, brown sugar and vanilla to a mixing bowl and beat on high until smooth.
Put the eggs and vanilla into the bowl with the mixture and beat again until smooth and creamy.
Preheat the oven to 375 degrees.
Pour the mixture into the frozen pie crust and bake for 40-50 minutes until set. Let cool completely to room temperature and then chill if desired before serving.
