Company Chicken Casserole is one of those popular dishes that can be made for potlucks, parties or buffets. It is fancy enough to impress, but simple enough to not cost you a lot of money. The chicken has a great sauce that is combined with a couple of other ingredients that give it the 'special' flavor.
Ingredients
4boneless skinless chicken breasts
1cupchicken broth
2clovesgarlic
2wedges of onion
4cupsPepperidge Farms Herb seasoned stuffing mix
1cube butter, 1/2 cup
1can Cream of Chicken soup
1pintsour cream
8ozfrozen broccoli cuts – thawed, optional
Instructions
Place a pot on the stove over medium-high heat and pour in the chicken broth, minced garlic, onion and place the chicken breasts. Let it boil.
Once it reaches the boiling point, lower the heat to medium-low and cover to cook for approximately 20 minutes.
Remove the chicken breast from the broth, shred and reserve. Save the rest of the broth for use later.
Melt the butter, and in a bowl pour over the seasoned stuffing mix. Mix. Spread this mixture in a large saucepan.
Mix the sour cream, reserved broth, and soup with a hand mixer.
Place the shredded chicken on the casserole with the mixture for the filling, and if you use broccoli, place it on top.
Pour the soup mixture over the saucepan with the chicken and finally top with the remaining filling mixture.
