Ingredients
4Lobster tails
1Tbsp.Fresh chopped parsley
1tsp.Dijon mustard
2tsp.Minced garlic
¼tsp.Salt
⅛tspBlack pepper
½Tbsp.Lemon juice
½Tbsp.Olive oil
2Tbsp.Butter divided
Instructions
Preheat the broiler on the oven.
Use kitchen scissors to slice down the center of the hard shell on the top of the lobster tail, but do not cut all of the way through the base.
Peel the lobster meat up from the ribs on the underside of the tail, being careful to keep the meat attached.
Fold the cut portion of the shell up under the meat, and rest the meat from the tail on top of it.
In a bowl, combine the parsley, mustard, garlic, salt, pepper, lemon juice and olive oil until well combined.
Spread the marinade over the top of each lobster tail.
Top each lobster tail with a ½ Tbsp of cold butter cut into pieces.
Place the lobster tails into an ovenproof skillet or baking dish.
Cook under the broiler for 10-12 minutes until cooked through. If your tails are on the smaller side, you may only need 8-10 minutes instead.
