I recall times of driving to KFC just so I could eat all the biscuits before I got home with the Chicken for dinner. Those biscuits were the best biscuits I had ever tasted. This recipe is one of the closest I have come to imitating the KFC fluffy biscuits. This recipe is easy to make and you will be surprised at how close they are to the otiginal biscuits.
Ingredients
2C.All purpose flour
1 ½tsp.Salt
1Tbsp.Sugar
4tsp.Baking powder
¼tsp.Baking soda
3Tbsp.Shortening
4Tbsp.Butter flavored Crisco
1C.Buttermilk
Melted butter for garnish
Instructions
Preheat the oven to 400 degrees.
In a mixing bowl, combine the flour, sugar, salt, baking powder and baking soda until well combined.
Add the shortenings to the bowl, and cut into the dry ingredients with the tines of a fork until a crumbly dough forms.
Pour in the buttermilk and stir until a dough has formed.
Lay the dough out on a floured surface, and knead until no longer sticky to the touch. Add more flour as needed.
Separate the dough into two even pieces.
Roll the dough out until ½ inch thick.
Use a 2 inch cookie cutter to cut circles out of the dough.
Place the circles of dough on a parchment lined baking sheet.
Bake for 15 minutes and brush the tops with melted butter immediately after removing from the oven.
