Everyone loves breakfast, and everyone loves tacos… could there be anything better than breakfast tacos?! We don’t think so. With this amazing breakfast taco recipe, your family simply will not be able to wait until “taco Tuesday.” This is truly a recipe you can prep ahead of time and make any day of the week—perfect for those of us who are busy as can be, but still want to make mornings special.
Ingredients
3Large flour tortillas
½Link smoked sausage sliced
⅓C.Bacon crumbles
6Large eggs beaten
½C.Thinly sliced onion
½C.Thinly sliced green bell pepper
1C.Shredded Monterey jack cheese
½Avocado diced
½C.Tomatoes chopped
Sour cream and chopped parsley for garnish
Olive oil
Salt and pepper to taste.
Instructions
Add some olive oil to a skillet over medium high heat and cook the vegetables until becoming tender.
Mix the smoked sausage into the skillet and heat until warmed through. Set aside the vegetable and sausage mixture.
Add the eggs to the same skillet and scramble well, adding salt and pepper to taste. Set aside.
Spray some cooking oil into the large skillet and place a large flour tortilla in it.
On half of the tortilla, layer ⅓ of the eggs, sausage and vegetable mixture, bacon crumbles, cheese, avocado and tomato. Fold the tortilla over the top and cook for 1-2 minutes on each side until the outside is lightly browned and cheese has melted.
Repeat steps 4-5 two more times to make a total of 3 breakfast tacos.
Serve garnished with sour cream and chopped parsley.
