These Peachy Keen Bars are a delicious, easy-to-make treat that is perfect for any occasion. The base of the bars is a simple oatmeal cookie dough that is packed with buttery flavor, then layered with a sweet peach jam and topped with a crumbly streusel topping.
Ingredients
1Box white cake mix
⅓C.Softened butter
2Large eggs divided
29oz.Can sliced peaches drained
12oz.Softened cream cheese
¼C.Granulated sugar
1tsp.Vanilla extract
Instructions
Preheat the oven to 350 degrees.
In a mixing bowl, combine the white cake mix, softened butter and 1 large egg with a fork until it forms a crumbled mixture.
Reserve a cup and a half of the crumb mixture off to the side.
Press the remaining crumb mixture into a well greased 9x13 baking dish.
Bake for 10 minutes.
Spread the drained peaches over the pre-baked crust.
In a mixing bowl, beat together the cream cheese, sugar, vanilla and last large egg until smooth and creamy.
Spread the cream cheese mixture over the peaches.
Sprinkle the reserved crumb mixture over the top of the baking dish and bake for 30 minutes.
