This hearty Potato Kielbasa Skillet is the perfect dinner for busy weeknights. The combination of potatoes and kielbasa is a classic that never gets old, This dish is simple to make and can be ready in under 40 minutes.
Ingredients
4Red potatoes cubed
1Pack Kielbasa sliced
¼C.Water
2Tbsp.Brown sugar
2Tbsp.Apple cider vinegar
1Tbsp.Dijon mustard
1tsp.Italian seasoning
½Onion chopped
3C.Chopped kale
1Tbsp.Olive oil
Instructions
Place the cubed potatoes and the water in a microwave-safe bowl. Cover and cook for 4 minutes in the microwave. Drain and set aside.
Add the olive oil to a large skillet over medium-high heat on the stove.
Saute the onions and sausage until the onions have softened.
Mix the potatoes into the skillet and saute for an additional 5 minutes.
In a bowl, whisk together the brown sugar, apple cider vinegar, dijon, and Italian seasoning.
Pour the sauce into the skillet and stir to combine.
Add the kale to the skillet and cook until wilted.
