This recipe is really easy to put together, it tastes great, and is a wonderful comfort food. The Meatloaf with Mashed Potatoes and Cheese is also kid approved.
Ingredients
For the meatloaf:
1Onion, Chopped
1tbsp.Olive Oil
½cupFrozen Peas
¾cupBreadcrumbs
3tsp.Garlic, Minced
1 ½lb.Beef, Ground
1Large Egg
¼cupTomato Sauce
¼cupParsley, Chopped
¼cupBBQ Sauce
Salt And Pepper To Taste
For the potatoes:
1 ½LbPotatoes, peeled, cubed
¼cupHeavy Whipping Cream
4tbsp.Butter
Salt And Pepper To Taste
1cupCheddar Cheese, Shredded
Instructions
Heat the oven to 400 degrees.
In a skillet over medium heat, cook the onions and garlic in the oil until softened. Remove and let cool.
Add the remaining ingredients for the meatloaf to a mixing bowl with the onions, and knead with your hands until well combined.
Form the mixture into a loaf shape in a 9x13 baking dish. Bake for 30 minutes.
While the meatloaf is baking, boil the potatoes until tender. Drain the water.
Add in the butter and heavy whipping cream as well as salt and pepper to taste. Mash well.
Spread the mashed potatoes on the meatloaf, and top with the cheese. Bake for an additional 20 minutes.
