This Pepperoni Pizza Casserole recipe is the perfect way to feed a large crowd. It's packed with all the flavors of a classic pepperoni pizza, but it's much easier to make. Plus, it can be easily customized to fit your taste.
Ingredients
1Lb.Turkey, Ground
1Yellow Onion, Chopped
1tspGarlic, Minced
1canTomato Sauce (No Sugar Added), 16 oz Can
1canFire Roasted Tomatoes (Drained), 16 oz Can
2tspOlive Oil
1Bag, 12 oz Low Carb Rotini Pasta
1tspItalian Seasoning
1cupNon-Fat Mozzarella Cheese, Shredded
1cupReduced-Fat Mozzarella Cheese, Shredded
1Small PackageTurkey Pepperoni, 32 Slices
Instructions
Preheat oven to 350 degrees.
Prep a 9 x 13 inch baking dish with non-stick baking spray.
Cook the pasta until it is al dente, drain it and set it aside.
Add the ground turkey, onion, and garlic in a large skillet with olive oil over medium-high heat.
Cook until the meat is browned. Drain any fat as needed. Reduce the heat to low.
Add tomato sauce, fire roasted tomatoes, and seasoning. Stir until blended.
Add to a large bowl. Add one cup of shredded cheese and 16 pieces of turkey pepperoni.
Transfer to the prepared baking dish. Sprinkle the remaining shredded cheese on top.
Place the rest of the pepperoni on top. Loosely cover the baking dish with foil.
Bake at 350 degrees for 20 minutes. Take out of the oven and remove the foil.
Return to the oven and bake for an additional 10 minutes. Serve.
