Chili is the perfect comfort food for a chilly night. This Crockpot Cream Cheese Chicken Chili recipe will warm you up and fill you up. Plus, it’s easy to make – just dump all of the ingredients in the crockpot and let it cook!
Ingredients
2Chicken breasts, Boneless, skinless
1PacketRanch seasoning
8ozCream cheese, softened
1tspOnion powder
15ozCan of black beans, rinsed, drained
1tbspChili powder
15ozCan of corn undrained
1tspCumin
1canRotel, undrained
Instructions
Layer the chicken in the bottom of the Crockpot.
Pour the Rotel, corn and beans over the chicken.
Sprinkle the onion powder, chili powder, cumin and Ranch seasoning over the mixture. Stir everything to coat and combine well.
Top the mixture with the cream cheese.
Cook on low for 6-8 hours.
Remove the lid, shred the chicken with two forks, and stir the contents to combine and mix well.
Serve topped with crushed tortilla chips and sour cream if desired.
