These Strawberry Cheesecake Chimichangas are the perfect treat for those who love both strawberries and cheesecake! The strawberry filling is sweet and tangy, while the cream cheese chimichanga dough is light and crispy.
Ingredients

6Soft flour tortillas 8” inches
1 tspVanilla
8 ozCream cheese , softened
¾CStrawberries, Sliced
2TbspSour cream
Oil for frying
For the cinnamon sugar topping:
1TbspCinnamon
⅓CSugar
Instructions
Heat 2 inches of oil in a skillet on the stove.
Blend together the sour cream, cream cheese, vanilla and 1 Tbsp of sugar in a bowl.
Fold in the strawberries.
Divide the cream cheese mixture into six servings, and layer on the bottom ⅓ of each tortilla.
Fold the edges of the tortillas towards the middle, and roll them closed.
Fry the chimichangas in the oil until golden brown, and drain on a paper towel lined plate.
Stir together the 1 Tbsp cinnamon and ⅓ cup sugar in a shallow bowl, and roll the chimichangas in them before serving.
