If you love pumpkin pie, you are going to love making these easy Pumpkin Pie bars. These cookie like bars are so good, they are sure to become fall favorite. Eat them as it or topped them with whipped cream for a decadent treat.
Ingredients
For the Crust:
1 1/3cupall purpose flour
1/2cuplight brown sugar
8tablespoonsunsalted butter, softened
3/4cupchopped pecans
For the Filling:
8ozcream cheese, softened
3/4cupsugar
1/2cuppumpkin puree
2large eggs, slightly beaten
1 1/2teaspoonscinnamon
1teaspoonallspice
1teaspoonvanilla extract
Instructions
Preheat oven to 350F.
Butter the bottom and sides of a 9×13 inch metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends. Place another piece of parchment paper in the same manner, perpendicular to the first sheet. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
Pulse crust ingredients in the bowl of a food processor fitted with the metal blade until crumbly, about 4 one-second pulses. Reserve 2/3 cup of the mixture for topping. Press remaining mixture evenly into the bottom of prepared pan. Bake 15 minutes. Cool slightly.
In the bowl of a stand mixer fitted with the paddle attachment, beat together filling ingredients until smooth. Pour over warm crust and sprinkle with reserved crust topping.
