Are These Pumpkin Bars with Cake Mix
While some pumpkin bars are made from a cake mix, these bars are made from scratch. The recipe for the crust and filling are very simple and use easy baking ingredients. There is nothing special needed but you get the benefit of nothing processed in the pumpkin bars.
Can you freeze pumpkin pie bars?
I love a dessert that freezes well. It lets me have the dessert that I am craving anytime because I can pull it out of the freezer. Pumpkin Pie bars are a great dessert to freeze. I always recommend cutting the pumpkin pie bars first before freezing them. This lets you take out a piece or two without having to take out the entire batch of bars. It is great when you know you can not finish all of them. Wrap each pumpkin pie bar in plastic wrap. Then store it in an airtight container or in a freezer bag. This gives the bars double protection from freezer burn and keeps them all together.
Does pumpkin pie need to be refrigerated?
Pumpkin pie bars do not have to be refrigerated. You can store these cookie pars at room temperature. While they will last longer when stored in the refrigerator, as long as they are stored in an airtight container or wrapped well in plastic the pumpkin pie bars can be at room temperature.
Ingredients for Pumpkin Pie Bars Recipe
- All purpose flour
- Light brown sugar
- Unsalted butter
- Pecans
- Cream cheese
- Sugar
- Pumpkin puree
- Eggs
- Cinnamon
- Allspice
- Vanilla extract
How to Make Pumpkin Pie Bars Recipe
Preheat oven to 350F. Butter the bottom and sides of a 9×13 inch metal baking pan.
Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends.
Place another piece of parchment paper in the same manner, perpendicular to the first sheet. (This will make it easy to remove the bars from the pan after they have baked.)
Butter the parchment.
Pulse crust ingredients in the bowl of a food processor fitted with the metal blade until crumbly, about 4 one-second pulses.
Reserve 2/3 cup of the mixture for topping.
Press remaining mixture evenly into the bottom of prepared pan.
Bake 15 minutes.
Cool slightly.
In the bowl of a stand mixer fitted with the paddle attachment, beat together filling ingredients until smooth.
Pour over warm crust and sprinkle with reserved crust topping.
Bake 30 to 35 minutes until firm.
