Chocolate Homemade Twinkie Recipe with Cream Filling

If you love Twinkies, this is the recipe for you. This chocolate homemade Twinkie recipe is the best of both worlds. The deliciousness of a Twinkie combined with a rich chocolate flavor.
Ingredients
Chocolate Sponge Ingredients
4eggs
1teaspoonsalt
3/4cupwhite sugar
3/4cupflour
1/4cupcocoa powder
1 1/2teaspoonbaking powder
2Tablespoonsmelted butter
Marshmallow Filling
2cupsmarshmallow cream
1/2cupshortening
1teaspoonsalt
1/3cuppowdered icing sugar
1teaspoonvanilla extract
Instructions
Preheat oven to 350F
Grease a twinkie pan and set aside.
Using a stand mixer (essential), beat the eggs and salt for 2 minutes then add the sugar and continue beating for 13 more minutes until the eggs are white and leave a ribbon along the top when the beaters are drawn over.
In a medium bowl, stir together the flour, cocoa powder and baking powder. Add half to the egg
mixture, incorporate fully, then add the butter, then remaining flour mixture.
Portion out batter into the twinkie pan, filling each about 2/3 of the way full.
Bake for 15-18 minutes, until an inserted toothpick comes out clean.
Let cool completely.
Meanwhile, prepare the filling by beating together all marshmallow filling ingredients. If it's too stiff, add a teaspoon or two of hot water.
Scoop the filling into a piping bag and snip a tiny amount off the end.
Using a chopstick, make three holes in the bottom of each twinkie. Try to move the end of the chopstick around a bit to make a bigger cavity for the filling.
Pipe the marshmallow filling into each of the three holes of each twinkie.
