Store bought Twinkies last forever, or at least that is what they say. However, a homemade Twinkie will only last about 5 days. Homemade Twinkies do not have preservatives in them which is why they have a significantly lower shelf life than the original version.

Does the Hostess Cream Filling Recipe Need to Be Refrigerated

When you make this cream filling, it is a marshmallow based filling. While some fillings would need to be stored in the refrigerator, this filling does not. That works best with the homemade Twinkie because cake in the refrigerator tends to taste dried out. You would not get the fluffy spongy texture to the outside of the Twinkie.

While these cupcakes should be stored at room temperature, you also want to make sure they are stored in an airtight container or a freezer bag. Since the outside of these cakes are not frosted, the cake needs to be protected from the air because it will go stale faster than a cake that has frosting on the outside.

When it comes to homemade Twinkies, if you have more than you can eat before they go bad, you can freeze them. Wrap each Twinkie well in plastic wrap and then put them in a freezer bag. The Twinkies will last for up to 3 months when wrapped well and stored in the freezer.

How Do I Add the Cream Filling

When you are ready to add the cream filling to these cupcakes, you are going to want to poke 3 holes into the top of the Twinkie. You will be adding the marshmallow filling into a piping bag with a tip that has a large hole. Then using the piping bag, you will fill each section with the crema filling. This creates the classic filling that is in Twinkies.

Ingredients for Chocolate Homemade Twinkie Recipe

  • Eggs
  • Salt
  • White sugar
  • Flour
  • Cocoa powder
  • Baking powder
  • Butter
  • Marshmallow cream
  • Shortening
  • Salt
  • Powdered icing sugar
  • Vanilla extract

How to Make Chocolate Homemade Twinkie Recipe

Preheat oven to 350F

Grease a twinkie pan and set aside.

Using a stand mixer (essential), beat the eggs and salt for 2 minutes then add the sugar and continue beating for 13 more minutes until the eggs are white and leave a ribbon along the top when the beaters are drawn over.

In a medium bowl, stir together the flour, cocoa powder and baking powder. Add half to the egg mixture, incorporate fully, then add the butter, then remaining flour mixture.

Portion out batter into the twinkie pan, filling each about 2/3 of the way ful

Bake for 15-18 minutes, until an inserted toothpick comes out clean.

Let cool completely.

Chocolate Twinkies

Meanwhile, prepare the filling by beating together all marshmallow filling ingredients. If it’s too stiff, add a teaspoon or two of hot water.

Scoop the filling into a piping bag and snip a tiny amount off the end.

Using a chopstick, make three holes in the bottom of each twinkie. Try to move the end of the chopstick around a bit to make a bigger cavity for the filling.

Pipe the marshmallow filling into each of the three holes of each twinkie.

Repeat with all twinkies and enjoy!
