Banana Cake with Marshmallow Frosting And Caramel Drizzle is an incredible dessert. It is a banana cake that is made with a cake mix, and transformed into a decadent banana cake that has incredible frosting. The perfect recipe for overripe bananas
Ingredients
1box yellow cake mix; I used Betty Crocker
1TSPbaking soda
1/2TSPcinnamon
1/4TSPnutmeg
Pinchof cloves
Water, oil and eggs; that are listed on the box
3large over-ripe bananas mashed; about 1 1/2 cups
Marshmallow Frosting:
5egg whites, large
1/2TSPcream of tartar
pinchof salt
2Cgranulated sugar, divided
2TSPvanilla extract
2/3Cwater
Caramel sauce; for drizzle
Instructions
Preheat the oven to 350 degrees. Grease 9 x 13 pan.
Start by mixing up your box cake mix, baking soda, cinnamon, nutmeg, and cloves. Give it a mix.
Then add in your water, oil and eggs as directed on the back of your box cake mix.
You will stir up the cake mix until almost completely mixed. Then stir in your mashed bananas.
Bake for 30-40 minutes or until your banana cake is done. Allow your banana cake to cool on a cooling rack.
Once your cake is cooled you can begin to work on the marshmallow frosting.
Place the egg whites, cream of tartar, and salt in a large mixing bowl and whip on medium speed until foamy.
While continuing to whip,you will slowly add 1 cup of the sugar; about 1 teaspoon at a time.
Once the entire cup of sugar has been added, continue to whip until the meringue can hold stiff peaks.
Whip in the vanilla extract, and continue to stir the meringue on low speed while you prepare the hot sugar syrup.
Place the remaining 1 cup of sugar in a small pot, along with the water.
Place the pot over medium heat and cook until the syrup boils and reaches 235 degrees F.
In a very slow and steady stream, add the hot sugar syrup to the meringue, while continuing to whip on low speed.
When all the syrup has been added, turn the mixer up to high speed and whip until very stiff and glossy. This will take just a bit of time to do.
Spread the frosting on the cake, and then use a kitchen torch to help give it a browned marshmallow look.
Then drizzle your choice of caramel sauce on top.
Once your cake is frosted and ready you can slice and serve your banana cake with marshmallow frosting.
