This recipe is simple to follow, easy to make, and tastes Delicious! There are also multiple layers of flavor and healthy ingredients like beans. This is also a great dinner for the family and everyone loves it! Plus I stick with the theme night at our place
Ingredients
1 ½lbs.Ground beef
½Medium onion chopped
1Can refried beans
1Can Rotel drained
2C.Prepared rice
½Can corn drained
5Large flour tortillas
2C.Cheddar cheese
1Package taco seasoning
Fresh chopped green onions for garnish
Instructions
Preheat the oven to 350 degrees.
Place the ground beef and onion into a skillet over medium high heat on the stove, and saute until the meat is browned and onions have softened.
Add the taco seasoning into the meat, and saute for a few minutes longer before removing from the heat.
Grease a springform pan that is roughly the same size as your flour tortillas.
Create layers as follows:Layer 1: Tortilla, ½ the rice, ½ the Rotel and a sprinkling of cheeseLayer 2: Tortilla, ⅓ of the beans, ½ of the meat, ½ the corn and sprinkling of cheese.Layer 3: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the Rotel and some cheese.Layer 4: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the corn, ½ the rice and some cheese.
Place a final flour tortilla on top, and sprinkle with the remaining cheese.
Lightly cover the pan with aluminum foil, making sure that it does not touch the cheese on top.
Bake for 40 minutes with the foil on, remove, and bake for another 10 without it.
Garnish with freshly chopped green onions before serving.
