Mexican Tortilla Casserole

This is the best Mexican casserole recipe, made with tortillas, chicken, cheese, It’s the best version of the Mexican comfort food casserole you can ever find.
My son is not a cheese fan, but he amazingly loves this recipe!!

Ingredients:
1 ½ lbs. Ground beef
½ Medium onion chopped
1 Can refried beans
1 Can Rotel drained
2 C. Prepared rice
½ Can corn drained
5 large flour tortillas
2 C. Cheddar cheese
1 Package taco seasoning
Fresh chopped green onions for garnish
How to make Mexican Tortilla Casserole:
Step 1. Preheat the oven to 350 degrees.
Step 2. Place the ground beef and onion into a skillet over medium-high heat on the stove, and saute until the meat is browned and onions have softened.
Step 3. Add the taco seasoning into the meat, and saute for a few minutes longer before removing from the heat.
Step 4. Grease a springform pan that is roughly the same size as your flour tortillas.
Step 5. Create layers as follows:
Layer 1: Tortilla, ½ the rice, ½ the Rotel and a sprinkling of cheese

Layer 2: Tortilla, ⅓ of the beans, ½ of the meat, ½ the corn and sprinkling of cheese.

Layer 3: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the Rotel, and some cheese.
Layer 4: Tortilla, ⅓ of the beans, ⅓ of the meat, ½ the corn, ½ the rice, and some cheese.
Step 6. Place a final flour tortilla on top, and sprinkle with the remaining cheese.
Step 7. Lightly cover the pan with aluminum foil, making sure that it does not touch the cheese on top.
Step 8. Bake for 40 minutes with the foil on, remove and bake for another 10 without it.
Step 9. Garnish with freshly chopped green onions before serving.
