I absolutely love rice pudding and have tried many recipes over the years. That is, until I found this recipe recently. It is simply the best rice pudding you'll ever taste.
Ingredients
¾C.Short or medium grain rice
1 ½C.Water
1C.Half and half
1C.Milk divided
⅓C.Granulated sugar
Pinchof salt
1Large egg beaten
1Tbsp.Butter unsalted
½C.Golden raisins
1tsp.Vanilla extract
¼tsp.Cinnamon
Instructions
Place the water into a saucepan over medium high heat on the stove. Bring the water to a boil, add the rice, and reduce the heat to a simmer. Simmer the rice covered for 20 minutes.
Add the butter to the cooked rice, and mix in the half and half, ½ cup of the milk, sugar and salt.
Place the other ½ cup of milk into a bowl with the beaten egg, and whisk to combine.
Cook the rice mixture over medium heat for about 15-20 minutes until it thickens well.
Add a small amount of the rice mixture to the bowl with the milk and egg, and whisk continuously.
Slowly whisk the tempered egg and milk mixture into the rice pudding.
Stir in the raisins.
Cook for another few minutes, remove from the heat and add the vanilla and cinnamon.
Let sit to cool and thicken, and then serve as desired.
