Best Rice Pudding Ever

I loved my Mom’s rice pudding….but haven’t found anyone who can make it as good…Yummy, a favorite of mine.

Sometimes I really love adding cinnamon and raisins to my rice pudding.

This is an easier recipe than the one I used to make!

If you love rice pudding, so time to make some

Ingredients:

¾ C. Short or medium-grain rice

1 ½ C. Water

1 C. Half and half

1 C. Milk divided

⅓ C. Granulated sugar

Pinch of salt

1 large egg beaten

1 Tbsp. Butter unsalted

½ C. Golden raisins

1 tsp. Vanilla extract

¼ tsp. Cinnamon

How to make Best Rice Pudding Ever:

Step 1. Place the water into a saucepan over medium-high heat on the stove. Bring the water to a boil, add the rice, and reduce the heat to a simmer. Simmer the rice covered for 20 minutes.

Step 2. Add the butter to the cooked rice, and mix in the half and half, ½ cup of the milk, sugar, and salt.

Step 3. Place the other ½ cup of milk into a bowl with the beaten egg, and whisk to combine.

Step 4. Cook the rice mixture over medium heat for about 15-20 minutes until it thickens well.

Step 5. Add a small amount of the rice mixture to the bowl with the milk and egg, and whisk continuously.

Step 6. Slowly whisk the tempered egg and milk mixture into the rice pudding.

Step 7. Stir in the raisins.

Step 8. Cook for another few minutes, remove from the heat and add the vanilla and cinnamon.

Step 9. Let sit to cool and thicken, and then serve as desired.
