If you’re in the mood for a classic Italian dish, this crockpot lasagna recipe is sure to hit the spot. With layers of cheese, pasta, and sauce, it’s easy to see why this dish is such a favorite. Plus, it only takes about 15 minutes to prep – perfect for those busy weeknights.
Ingredients
1 ½lb.Ground beef
1tsp.Italian seasoning
1Jar pasta sauce
1C.Cottage Cheese
½C.Ricotta cheese
2Tbsp.Dried parsley flakes
¼C.Parmesan cheese + additional for garnish
1BoxRegular lasagna noodles, not oven ready
2C.Mozzarella cheese
Salt and pepper to taste
Instructions
Brown the ground beef in a skillet on the stove over medium high heat. Drain any excess grease and mix in 1 tsp of Italian seasoning as well as salt and pepper to taste.
In a mixing bowl, combine the cottage cheese, ricotta, parsley flakes, ¼ cup parmesan and salt and pepper to taste.
Place a thin layer of pasta sauce in the bottom of the crockpot, and layer 3-4 lasagna noodles on top of it. You may need to break the noodles to get them to fit.
Pour the rest of the pasta sauce into the meat, and stir to combine.
Add ⅓ of the meat mixture to the top of the noodles.
Spread ⅓ of the cottage cheese mixture on top of the meat. Sprinkle with ⅓ of the mozzarella cheese.
Repeat the layering mentioned above two more times, topping the mixture with the remaining mozzarella cheese.
Place the lid on the crockpot, set it to high and cook for four hours. Garnish with more parmesan prior to serving if desired.
