Potatoes are a wonderful addition to meals year round. These parmesan roasted red potatoes take almost no time to prep, can be made ahead of time, and reheat easily! Make double to save for a second night or to bring along to a potluck! These roasted parmesan red potatoes pair well with seafood, chicken, pork or beef and can be part of a celebratory meal or a weeknight dinner. They’re quite versatile!
Ingredients
2lb.Red potatoes quartered
⅓C.Oil
1Packet of onion soup mix
½C.Parmesan cheese grated
Salt and pepper to taste
Instructions
Preheat the oven to 350 degrees.
Add all of the ingredients to a large Ziploc bag and toss to coat well.
Spread the coated potatoes into a 9x13 baking dish.
Cover the dish with aluminum foil and bake for 35 minutes.
Remove the foil and bake another 15 minutes before serving.
