With a crunchy, golden brown coating and a hint of Dijon mustard flavor, my recipe for Crispy Chicken Schnitzel is a great choice for dinner tonight. This recipe takes boring old boneless, skinless chicken breasts and gives them a tasty twist.
Ingredients
12Boneless Chicken Breast Halves, Pounded
2 Eggs, Large
3tbspHoney
3tbspDijon Mustard
2 ½tbspSoy Sauce
1tbspGarlic, Finely minced or crushed
3cupsBread crumbs
1tspSalt
1tspBlack Pepper, Cracked
Vegetable oil for frying
Instructions
In a medium bowl, whisk eggs, Dijon mustard, honey, soy sauce, and garlic together.
Heat 1/2 to 1 inch of vegetable oil in a large skillet.
Add bread crumbs, salt, and pepper and mix together in a shallow/large bowl.
Put chicken breasts in the egg mixture first and knead until fully coated. Then, press the chicken pieces in the bread crumbs until evenly coated. Make sure to press hard to cover all the chicken.
Carefully and slowly place chicken in the hot oil using tongs and cook until golden brown.
Place the fried chicken on a plate lined with paper towels to drain excess oil.
